LA P’TITE is the result of a unique process that begins in the heart of Quebec’s forests. All of our spruce and fir branches are harvested by hand, paying special attention to preserve their natural aroma. We make sure to disturb the trees as little as possible—taking only what we need from their branches.

Back in Montreal, we infuse the branches in natural, mineral-rich water, allowing for proper fermentation. We then add just enough sugar to balance the delicate spruce aromas. Fermentation, which creates the bubbles and complexifies the aromas, begins as soon as the yeast is added. This process also increases the acidity rate: the secret to discarding artificial preservatives.

Fermentation is kept to a minimum to maintain alcohol levels below 0.5%, which is the government norme for non-alcoholic beverage.
